You are probably used to go to the supermarket and find packages of Kraft Macaroni & Cheese, Heinz canned Spaghetti with Meatballs and Heinz canned Fusilli Bolougnese, Zapetti canned Ravioli and boxes of pasta Panzani.
First of all, fusillies (or spaghetti) with meatballs are not a typical dish. I thought it was an invention of Walt Disney to make more appetizing some cartoons such as “Lady and the Tramp”, I instead discovered that it was an invention of Italian emigrated women in America in the early ’900, who preparing sauce with watery tomatoes, were obliged to add the meat that abounded in America.
The spaghetti bolougnese not even exist. If anything, you can find tagliatelle alla bolognese (not boloUgnese or boUloUgnese, nor boloUgnAise, it means “from Bologna”), but we will discuss later about the distortion of the typical Italian cuisine names.
As I was saying, you are used to go to the supermarket and find the above mentioned brands of pasta … I spill the beans: the Macaroni & Cheese DO NOT EXIST! Or better, in Italy, the home of pasta, do not exist. But Macaroni do not even exist without cheese. If anything, exist MACCHERONI which are a type of pasta. And never, you will see an Italian man or woman, get in the cart canned ravioli. These boxes have never crossed the Italian border to come in, and even if someone has bought them by mistake, the boxes ended up in the bowls as dog food.
And what about the Panzani pasta? Panzani who???
How to cook pasta
– Take a pot
– Fill it with water
– Put the salt. Or immediately, or when the water boils. It is the same, the important thing is to put it before the pasta.
– When the water boils, put the pasta into the water (“buttare la pasta”)
– When the pasta is ready, drain the pasta in the colander.
– Dress it.
For our English friends: IT IS ABSOLUTELY FORBIDDEN TO PUT THE PASTA IN THE COLD WATER!
